If you are interested in character meals, then try to snag reservations for Chef Mickey's. Hoop de Doo Review is suppose to be a lot of fun. O'hana is another fun experience. Crystal Palace is another character meal, but it features Pooh and Tigger.
Our favorite counter service meal in Magic Kingdom is Pecos Bill. Epcot has a bunch of options in the world showcase. I'm a fan of the bavarian cheesecake in Germany. My husband likes the fish and chips in England.
Pizza Planet is a quick service stop in Hollywood Studios. Our Toy Story fan loves that one
Tusker House in Animal Kingdom is great, as is Yak and Yeti. Yak and Yeti has table service and a smaller counter service menu.
Downtown Disney has T-Rex Cafe, and I believe it takes the dining plan. I think that one would be a lot of fun for an 8 year old boy.

This is so dependent on what you like. My older daughter loved Chef Mickey's, and both of my kids enjoy Crystal Palace. For counter service we always hit Sunshine Seasons when we're in EPCOT (lots of choices/variety so everyone is happy). Starring Rolls Cafe in Hollywood Studios is another favorite with great desserts. In DTD, our go-to meal is from Earl of Sandwich, followed by sundaes at Ghirardelli.
It's all subjective, though. The PPs DC liked Pizza Planet, and my kids hated it so much we had to get out of line before we even ordered because they just didn't want to stay. It was too loud and not what they were expecting based on the movie. So YMMV on all of these!
MGM has a fun place (Sci-Fi Dine in Theatre) where you sit in fake cars and watch sci-fi clips - it's made to look like a drive in. Mama Melrose (also at MGM is really good as well). We ate there for the Fantasmic dinner package, which I recommend doing - we got front row seats to the show which was awesome. The California Grill (at the contemporary) is great too - but pretty upscale (although they do have a kids menu obviously).
