I want light, fluffy classic rolls. My mom's classic recipe is good, but it's a bit dense for what I am craving. I wonder if what I am craving is what they call air buns?? Soft rolls that dent when you pick them up, rip them open and they are soft like cotton candy...mmm warm with butter.
I like annies-eats honey-yeast rolls (the honey is not overwhelming, fwiw). www.annies-eats.com/2008/10/29/honey-yeast-rolls/ I've made these many times, and they are very soft, and light. In my experience, what contributes to them being light and not heavy/dense, is a light hand when measuring the flour. So, I pour the flour into my measuring cup as opposed to scooping the cup into the flour (and compacting the flour). Also, through enough trial and error, I've learned that my breads are best when the dough is on the stickier side. I used to add up to a half cup more flour in my mixer because I always thought it was too sticky- well that just made my bread more dense. So I've lightened up on the amount of flour I use. Well that turned into a novel, lol. hope it helps though!
I ended up using a recipe from Pinterest and omg....I have eaten 2. I'm allowed right? They are sweet and fluffy and melt in your mouth....mmmmm
Of course you are! I made a joke yesterday at the in-laws house about eating for two. I took two huge pieces of pie (with intentions on sharing with DH) and my brother in law was like "um...are you sure that's enough pie?" and I said, "well, I am eating for two after all!" which exploded through the house like wildfire. My in laws do not drink, or I would have thrown back a few shots to put that rumor to rest!
