Roasted Chicken with Sweet Potatoes and Carrots Boneless Skinless Chicken Breasts Carrots & Sweet Potatoes – peeled and chopped up into ¼-1/2 inch cubes
Put it all on the same cookie sheet type pan(lined with foil), drizzle with olive oil, sprinkle with salt & pepper. Bake at 400 degrees for about 25 minutes.
Everything cooks in the same amount of time on one pan. I make it about once a week, it’s yummy & easy.
London broil drizzled with Worcestershire sauce. Broil or grill for about 7 minutes per side for medium rare. I serve with mashed potatoes and a vegetable.
Sadly, there's no Trader Joes here. None in the whole state of Florida, actually. Boo
We have one in Naples!
Anyhow. Quarter an o ion, pull it apart and throw in the bottom of the crock pot. Put a whole chicken on top of it (or le quarters, but it's gotta be on the bone with skin). Seasonings on top - poultry seasoning, garlic, salt, pepper, whatever you like. Cook on low for about eight hours. You can do this without thawing the chicken, too. Steam some veggies or make rice - yummy!
Seriously? That is wonderful news!! Now it just needs to make its way north!!
I'm in Jax, nowhere near Sarasota. We only got a Whole Foods 4 or 5 years ago, and it's way across town from me. (Although I can practically walk to Fresh Market, so it's not all bad.)
I have a friend in grad school at UF and they just got one in Gainesville.
I LOVE Fresh Market. There's not one near me though.
When I make it I use the thinly sliced chicken breasts and a medium sized yellow onion chopped. I don't have Montreal seasoning either so I just sprinkle on salt, pepper and onion powder.
If you don't have time to make a sweet potato, I'm pretty sure they carry frozen mashed sweet potatoes in the freezer section.
Take a loop of polish sausage (I use the turkey sausage), cut if in pieces, toss in pan with half bag of frozen broccoli. Cook until broccoli is hot. Serve over a carb and sprinkle with parmesan and/or red pepper flakes. Couscous is the easiest and fastest carb to make.
I make all of the following with shredded chicken I have precooked and frozen or meat from a rotisserie chicken from the grocery store, which makes it very quick and easy:
Chicken quesadillas or chicken tacos with black beans and rice Chicken and veggie pizza (with store bought crust) Crockpot tortilla soup Chicken Caesar pitas Chicken fried rice Greek salad with frozen spanikopita or hummus and pita
Pasta, pork chops or burgers on the grill, and breakfast for dinner are our other standbys.
I buy sweet potatoes at the grocery store that are wrapped in plastic.
Easiest dinner: 1. put sweet potatoes in microwave. This is for H and I so I do 2, it takes 15 minutes. 2. I buy packages of ham steaks at Sam's, 4 to a package. 1 ham steak is enough for both of us. I lightly brown this in a skillet, more to warm it up than anything because they are pre-cooked 3. I make a box of stove top stuffing.
When done, I cut the sweet potatoes, put some butter in the opening, add some brown sugar and sprinkle cinnamon on it. I put a couple scoops of stuffing and 1/2 a ham steak on each plate. Quick and hot. Great for fall or winter.
1 Kielbasa/Polish Sausage 1 Bell Pepper 1/2 Onion 1 Pineapple Small handful of Brown Sugar
Chop everything into chunks and dump in a pan. Top with any pineapple juice that may be left and brown sugar. If you're feeling creative, add some spices. Bake until it's browned to your taste. (15 minutes or so?)
No trader joes or anything like that in my area..so we are always stuck making everything..

Rice and beans: one cup of minute rice, two cans of beans (black, pinto, kidney, whatever) rinsed. Then add salsa, chili powder and cumin. Add whatever else you want- usually some chopped jalepeno, frozen chopped onion, frozen chopped bell pepper (or fresh if you have it) and frozen corn. Melt in some cheese if you want, and/or top with sour cream. Done.
It's this dish that I call "red chicken." I put chicken breasts and sausage in the pot crock with spaghetti sauce, garlic, and red and green peppers. Serve over pasta or rice. Really easy and tasty!
If I am SUPER lazy, I'll buy the Tyson ready-done chicken strips. If I am not lazy, I'll pan fry the chicken strips 1st. It takes maybe 10 minutes for that part. Add in frozen peppers+onions mix from Kroger to the chicken strips once they're cooked.
Can of black beans or pinto beans, depending on our mood.
Spanish rice bag. Cooks in ~20 min
100 cal Wholly Guac snack packs, mexi-blend cheese, sour cream and salsa for the toppings.
Chop up a bell pepper (red, green, whatever), a red onion and a couple garlic cloves. Cook in frying pan with oil of choice (I usually use coconut or olive). Buy some pre-cooked flavored sausages (Target has yummy chicken sausage), chop up and cook with peppers/onions. So tasty, doesn't even really need a side.
Also, my favorite "homemade" pasta sauce. Take one onion, cut in half, place face down in sauce pan. Add large can of stewed tomatoes. Add 1/2 stick of (real) butter. Heat on med-high until butter melts, then turn down to low-ish and let it simmer for about 45 minutes. Stir occasionally, smashing the tomatoes with the back of the spoon. Take out the onion halves, and serve. It's so, so good. You can do with fresh tomatoes, too, but I prefer the method that only involves opening a can. Sometimes I add a little fresh basil toward the end, a little cracked black pepper and kosher salt, but it usually doesn't need a thing.
Our easiest meal is making bean burritos. One can of refried beans, dump in some salsa, cheese, and (maybe) ground beef (we keep some pre browned in the freezer). Microwave for 5 min, stirring occasionally. Scoop into a tortilla. Done.
