Nachos. Basically, I just brown ground beef, drain the fat, then add a jar of salsa/frozen mexican veggie blend/refried beans (what-have-you). I pour the ground beef mixture into a baking pan and cover it with shredded cheese, then pop it into a hot oven for 2-3 minutes to melt the cheese. I do not add chips. I serve the chips, sour cream, and guacamole separately, so the chips don't get soggy and you can reheat the leftovers easily. You just kind of use the chips to scoop up everything else and deliver it to your mouth. Or, if you're watching your carbs like me, you scoop everything onto lettuce leaves.

I also make couscous by adding a can of soup instead of plan water. That makes a great side dish for days when I buy a rotisserie chicken from the grocery store.
