I'm going to a BBQ on Memorial Day and would like to bring a side dish. I'm trying to think of something that won't be a duplicate so I thought I'd try a cold tortellini salad. Does anyone have a great recipe? Or even if not tortellini, another side that would be good.
ETA: Another thing I do with tortellini is what I call pasta salad skewers. I alternate tortellini, black olives, grape tomatoes, cheese and salami chunks and then marinate in italian dressing. They take a little more work, but they are very pretty and tasty.
Make a dressing with olive oil, lemon juice, salt, pepper & dried basil and oregano. Add one pound cooked cheese tortellini and half a red onion, sliced very thinly. Chill for a few hours. Before serving, toss the mixture with 6oz baby spinach and a package of crumbled feta.
