For strawberry spinach salad: spinach strawberries (quartered) almonds pecans or walnuts a few other veggies or fruits. I like tomatoes and a coloured pepper, but have also added mushroom. I have also eaten it with grapefruit pieces.

and for the dressing -- i just use a good bottled balsamic dressing. sometimes i make my own dressing, but it's not necessary for this salad (IMO). a good balsamic vinegrette does the job.
I always make this saled exactly but with a kraft poppyseed dressing....
It is ridiculously good! I don't have my exact recipe on hand but I got this one from allrecipes and the dressing is extremely close. As long as it has the mixture of the vinegar and sugar the seasonings are extra

bean salsa, one of my faves. This is a good base recipe, adjust spices/ingredients as you like. I usually use more beans, garlic, and cumin. I also add lime juice and zest.
1 can black beans (rinsed) 1 can shoe peg corn 2/3 c. chopped cilantro 2/3 c. green onions (both green and white part) 2 diced tomatoes (seeded) 1 diced avocado
¼ c. olive oil ¼ c. red wine vinegar 2 cloves garlic (minced) ¾ tsp. salt 1/8 tsp. pepper 1 tsp. cumin
Mix the first 6 ingredients together. Mix liquid ingredients together and pour over black bean mixture. It is better if it can sit 1-2 hours before serving.
I've been doing a non-mayo based potato salad a lot lately. Boil small red potatoes and quarter them. Add lightly steamed green beans, chopped kalamata olives, capers, thinly sliced red onion, cherry tomatoes, chopped parsley. Dress with olive oil, lemon juice (throw some chopped garlic in the juice to "cook" for a while first), salt and pepper. Cool and serve.
