Due to being on a 5 day winter cleanse, I'm supposed to finish the cleanse week off with some squash soup and oatbread tonight. Since it's my first day back at work and I'm aggravated and hungry, I'm really tempted to say screw it and dig into one of the recommended post-cleanse weaning meals with an omelet and cornbread. Crazy like that....

I also just made a giant vat of Italian Ground Beef and Vegetable Soup... It better be good because we are going to be eating this stuff for a while.
Tonight- Leftover smoked pork, baked potatoes, green beans Tues.- Teriyaki chicken, steamed rice, gyoza, steamed broccoli Wed.- Probably pancakes and turkey sausage Thurs.- Open-faced turkey sandwiches and salad Fri.- Date night Sat.- Chicken salad melts with garbanzo and fideo soup Sun.- Dinner at the in-laws but I will be bringing a trifle for dessert
slice chicken breast thinly - 2 breasts make 6 thin slices.
combine 1 cup(ish) of moz, 1 garlic clove, parsley, oregano, salt, pepper in a bowl. mix together. put cheese mixture on sliced chicken.
roll chicken and secure with toothpicks. coat lightly in egg/crushed reduced fat wheat thins. bake 35 mins @ 350. some of the cheese oozes out and browns. IT'S DELICIOUS. we served it with marinara sauce and a side salad.
