Heh, yeah, I mean, bitter foods are bitter. But, from what I can gather between me and my DH (my control in the testing-ha!) is that the bitterness is magnified to the point where I don't eat certain things. Coffee that he would describe as weak, tastes like licking coffee grinds. Coffee that he considers strong, I can barely get down if at all.
But, that being said, I am not picky in the slightest! I'll try anything once. If it turns out to be too bitter, I'll give it a couple more shots and then just decide it's not for me.
And, I think most chefs actually aren't "supertasters" - they're more well-rounded and down the middle, eating (and refining) lots of tastes and combos. I'd never make it! Ha!

I am a supertaster, and there is a test for it. They have you taste a chemical (phenylthiocarbamide) which most of the population cannot taste, but it is very bitter to supertasters.
There's tons of articles on this but my head hurts and I don't feel like linking a bunch. However, it is a real thing, but I do think some people use it as an excuse to be picky.
It's kept me from being a drunk cuz most wines make me want to hurl. So there's that!

That is just awful. You poor thing.
I know. I don't mind my aversion to broccoli but damn it sometimes I want to get my drink on!
Actually, I have been known to sip it through a straw. It is more tolerable that way though people look at me funny. Fuck em. Don't mess with me and my straw!
I'm a super picky eater. It led to me extracting a rubber band from somewhere unholy. I've tried to be less picky since then.
ETA: If only my mom would have BF me, maybe things would be different.
What does this even mean? You dislike so many foods that you ate a rubber band?
Lol. It's a TMI story...
I was out to dinner with my husband's parents (we were only dating at the time) and it was a Moroccan restaurant. I forgot to ask for no raisins and I didn't want to be weird and picky in front of them. So instead of chewing the raisins, I swallowed them whole. There was a piece of rubber band that I felt go down the back of my throat, which I would have noticed before if I would have been properly chewing my food. I didn't know that it was a rubber band that I had swallowed until the next day, when I had to pull it from my butt. It was a blue rubber band like the kind that they tie around cilantro. I'm assuming that's how it got into my entree. Anyway...
However - and this is flameful, I admit, and not necessarily directed to the OP - why is it that almost all extremely picky eaters will "only" eat junky foods? I just have so much skepticism that this is "beyond their control" and not something that they didn't learn/pick up/form a habit around. Sure, I'd love to only eat pasta, pizza, and chips - THAT SOUNDS DELICIOUS - but c'mon! It's totally reasonable to not like some foods, but almost ALL of them? I will never understand, and I guess I should be thankful for that.
Back to the topic at hand - OP, what is your #1 most hated/gag-o-rama food item? ETA - my question was already asked. OP, what's something you've NEVER tried before?
I'm a pretty picky eater, and I wouldn't categorize most of the foods I eat as unhealthy.
I won't eat grapefruit or uncooked broccoli (it's too bitter, but it's ok when cooked) or cilantro (it tastes like soap), but other than that I'll eat almost any fruits or vegetables, and they're a large part of my diet.
If I have a choice I don't eat beef, but if I'm a guest I will.
I hate commercial white bread.
Spicy foods give me migraines, so that cuts out a huge chunk of foods (yes, a neurologist helped me do an elimination diet, and the only thing that made a difference was spicy foods) and I'm paranoid about ordering something that I think isn't spicy and then it is, because that means I have to either take migraine meds I can't really afford or spend the next two days in a dark room.
All my favorite foods are bland. Oatmeal, peanut butter and jelly on what bread, fruits, vegetables, chicken, tilapia, catfish, etc.
My most hated is raw oysters. I just can't eat them. I can eat them cooked, but still don't like them.
You are not a picky eater. A picky eater is a 34 year old woman who makes her future SIL's parents send back her dinner at her brother and SIL's rehearsal dinner because it was spaghetti noodles with tomato sauce and she 'doesn't eat long pasta' and demanded penne. Picky is a 34 year old woman who eats dry cornflakes for breakfast, toast for lunch and either garlic bread or cheese pizza for dinner, every single day. Who has never in her life eaten a piece of fruit or a vegetable. Someone who eats catfish is not picky.
I've heard if this and it sounds awful:( I don't think I'm a super smeller, if that exists, but I definitely have a much more sensitive nose than most people.
My husband is like this. I've taken to calling him McGruff the Crime Dog.
I'm amazed you haven't ever had a bit of bar soap lodged under a fingernail, and accidentally chewed on it or something.
I'm also amazed that curiosity never overcame you as a child.
The cilantro thing is genetic, but it isn't linked to super tasters. Just one of those weird things, like the direction your hair whorls or if you taste the bitter strips in high school biology.

I've done this test, and I could taste the chemical. But I don't consider myself a supertaster.
Or have you ever drank water from a glass that was not properly rinsed after washing? I do that to my kids' cups sometimes. Sorry, kids.
I'm a reformed picky eater. Thankfully I came around in college, mainly because I started eating more healthily. Now my hate list only consists of red wine, coffee, mayonnaise, onions, and cilantro (which, yes, tastes like soap to me).
I remember reading that people who taste soap in cilantro are supertasters but that didn't lead me to self-diagnose myself as one.

That woman is well out of the picky eater category and into the ridiculous category. At most restaurants by the time I've cut out spicy foods I'm down to half the menu at best, and cutting out beef usually cuts out at least half of what's left, so at best I'm choosing from about 20% of any given menu, and sometimes closer to 10%. I see getting rid of 80-90% of options at most restaurants as picky, but from your perspective, I see why it isn't.
I've never heard of supertasters. My SIL is super picky, she eats McDonalds for breakfast every morning, burgers, chicken fingers, fries etc. We rarely make plans with them because she will only go to 2 or 3 shitty restaurants like Olive Garden.
I like all food except if its REALLY junky food I can't do it. Like twinkies or combos. My DHs ex gets SDs combos all the time and when they get in our car at exchanges, the smell makes me gag.
I'm one of those people who can taste whatever that compound is (I remember chewing on that little piece of paper and gagging at the taste), and can't do grapefruit, coffee, wine, or beer. They make my whole mouth contract and it's hard not to spit them out.
But I LOVE broccoli, Brussels sprouts, and cabbage. I'm all excited because my DH is going put of town and I can eat Brussels sprouts for dinner every day. Can anyone explain this?
