I made a beef stew in mine the other day that was good. I browned stew beef (1.5lbs)and threw in an onion, 2 carrots, 2 potatoes and 1/3 cup barley and three cups water. I didn't have beef bouillon so I used chicken bouillon instead. you could probably skip the browning, and add more seasoning as desired.
Pesto Ranch Chicken, I use chicken breasts instead of thighs and I often omit the ranch when I just don't have it. The Pesto from Costco is great for this. Good quality and value.
Pot Roast with Carrot, Potatoes, Celery, Onions (Chuck roast, chunk up the veggies, season, and add some beef stock, bay leaf, garlic, and lots of pepper. Then for leftovers, shred beef, add more stock and boil some egg noodles in the stock for beef & noodles).
I just made this. I cut back the bacon and add more potatoes. allshecooks.com/2013/04/09/copycat-zuppa-toscana/ I also am a sucker for throwing a family pack of chicken in the crock pot with some broth. I then use the chicken for enchiladas, tacos, buffalo chicken flatbread, pasta, etc.
And I'll also do a whole chicken and serve that one night, and then turn it into chicken noodle soup for another night. I pick all the meat off the carcass, fill the crock back up with water, and leave it on low for 12ish hours. Drain, add veggies, chicken, and noodles.
It says to cook on low for 4 hours. do you think it would be ok if I left it while I was gone all day for work. 9-10 hrs?
I did mine on low for 8-9 hours while I was at work. It turned out fine. The mushrooms got really cooked, so if you like them a little less cooked, add them in the last couple of hours (I thought they were fine though). The chicken also got super, super soft and delicious. I didn't even have to cut it up, I just lightly shredded it with a fork.
