We are building, and I thought I wanted dual fuel so I could have a gas cooktop and electric oven. I always heard electric ovens were preferable because they were more even heat, and that's what I've always had anyway. But then a friend told me she loves the gas oven she just got. Maybe they have improved?
Love my gas stove and by default my gas oven as well. If I ever went back to electric it would be to an induction. I've had coil and glass top electric ranges. I'd never do a coil and while I liked the glass top (and it was sooo simple to keep clean) I much prefer cooking with gas. If you're building, can you go with a dual option? If this is your "forever" house and you change your mind 10 years down the road, you'll have the option to cap off gas to use electric. It's cheaper to build in the plumbing and electric options for possible future use than it is to do it after the fact.
We have a gas oven. I haven't noticed any difference with it vs. the electric ones I've used. We were way more concerned about having a gas range. I don't know that I've heard any debate about gas or electric for an oven though.
I had a gas oven when we lived in CA (6 years ago). I hated it. I LOVE to bake, but it zapped my love of baking almost instantaneously. The heat wasn't even (in location or in temperature) and nothing turned out as nice as in my previous (cheap, 9 year old, builder grade) electric oven. If you can afford it, I'd buy dual fuel in a heartbeat.
If I could do dual I would but then I have an old gas stove and it is very finicky. It is way to hot and I have to cut the temp on everything and check everything constantly to make sure it doesn't burn.
Gas ovens take too long to preheat. So annoying. Our old house had a gas stove and gas oven. Our new one has a gas stove and double electric ovens. It is THE BEST! Dual fuel if you can.
ETA: My only issue with the gas oven was how long it took to preheat. Things came out mostly okay when baking though bread was rather finicky in it. The preheating was a big issue for me, though. If I had a choice, I would absolutely not choose a gas oven.
My gas oven is slow but that works for baking. If I went back to electric, I would opt for a convection oven.
This new house has an electric/convection oven and I have yet to read up on the convection piece. What do you like about it? I'm assuming recipes would need to be adjusted at the least.

When we bought our house the stove was fairly new and is all electric. I do prefer the oven to my previous gas one. Cooks faster and more evenly I think. I miss my gas stovetop though, I felt like I had more control over the heat with it, though the ceramic top is so easy to clean. I'd have a combo if I had my way, but it's unlikely we'll replace it since it's pretty new.
I grew up electric and I prefer it. I hate our gas stov,e, it is so slow. I haven't really noticed a difference with the gas oven. I actually think our gas oven heats up faster than electric but not sure. IF I had a choice though, I'd go for an electric convection oven.
Huh. I've had no issues baking with our gas oven. I had no idea this was a common issue.
I think if you've never used an electric oven or aren't extremely picky about your baked goodies, you probably wouldn't notice/care. The stuff I did bake was always really good, it just wasn't AS good as I knew I was capable of making. I think the same is true for someone not knowing how much better it is to cook on gas stoves if they've always cooked in electric. Gas ovens and electric stoves are both perfectly capable of making delicious food...but cooking on gas and baking in electric often produces a slightly better result (and is easier!)
It bakes OK, it's not quite as tightly calibrated as it should be (but my last electric was off 20* too) and the heat is spottier than in electrics I've used. The gas oven broils better.
I would buy a dual fuel if I were buying again. I have a microwave with a convection oven I like as well.

I've had both gas and electric. I'll never use electric again. It didn't cook evenly, took forever to heat, and didn't heat properly. I always had to set it at least 50 degrees higher.
Get gas convection. My mom has a double convection oven and I covet it.

We just went from an electric glass top to gas with a convection option. Love the gas. Our gas heats up in half the time. The stove top is definitely harder to clean but I wouldn't give up the gas for another electric. I find it interesting their are so many varied opinions. I think a lot of that has to do with the type of oven/stove people own and how old it might be.
We use our convection when cooking more than one item. It helps distribute the heat among all the items in the oven.
Ours doesn't seem too long to pre heat, but I use the fan while preheating, and not while cooking. The fan seems to cook well, but not good for baking. I wouldn't go back to electric heat.
I currently have a gas oven after having electric forever.
There was definitely a learning curve for baking & roasting. Mine seems to run hot, so I had a lot of unintentionally overcooked items for several months. I can also tell that the heat doesn't distribute as evenly as my electric oven did. I actually have to rotate the pan midway through baling, which I never had to do before.
Ideally if I ever redid my kitchen, I'd probably switch back to an electric oven. But our kitchen is like a year old, so that's not happening anytime soon.
Hmmm...it seems that there is no good consensus except that if I go gas I need to get convection, which seems to make sense for heat distribution. I'm not a huge baker, but I do like making cookies and such a few times a month.
I love you DCS pro style gas range and oven. It has convection, but I never use it.
I grew up with gas and I don't remember what it's like to use an electric oven for the couple years we did have it. I don't remember liking it it at all.
Our gas oven preheats like a mofo and cooks awesomely and evenly. My husband bakes like a billion times a month with it and everything comes out perfect. It's a Five Star.

I hate electric! I have a gas range with convection oven. I love the thing! I brought it with me when we moved last year and had a gas line installed just so I could keep it.

I have gas cooktop and oven. I like the gas cooktop, but I wish I had an electric or convection oven. Mine is only about 2 years old but it seems to not heat evenly.
