If I was thinking fun for the kids, I would probably do a waffle bar with different fun toppings.
As for what I'm making, there will be 9 of us, so sausage casserole with hashbrown crust, eggnog baked french toast, and a chocolate pastry ring that was from my niece's volleyball fundraiser (similar to the TJ's chocolate croissants you let rise and bake).
We keep it small since we go to DH's grandparent's for lunch then to my IL's for dinner. ETA - my pic didn't show up. We make Pillsbury Cinnabon cinnamon rolls
I usually make monkey bread and prep the dough the night before. But, I made monkey bread muffins a few weeks ago and they were s big hit and far less mess, so I think that's my new go-to. I just used the recipe on the Pillsbury website.
We go to the ILs; MIL makes Scotch Eggs (a hard boiled egg wrapped in sausage - it is almost my favorite part of Christmas!), bacon, sometimes french toast, and I've brought homemade cinnamon rolls before. And I always bring Mimosas.
When we are home or not about to leave on a roadtrip I get a big tray of donuts and bagels. My kids loved them because it's not something I let them have for breakfast otherwise.
Sunday morning breakfast is a tradition around here the rest of the year so all the exciting stuff is a but usual to them...ha...donuts however make their whole holiday.
If we're on the road in the morning I will let them have poptarts, fruit snacks, a treat from their stocking. Stuff they don't get the rest of the year either.

I'm going to make Pioneer Woman's french toast bake/casserole. If it turns out well, I'd like to make it our tradition for Christmas morning. Love that I can prep it the night before and just pop it in the oven while we open gifts in the morning.
Last year I decided our new tradition was going to be cinnamon rolls on Christmas morning, so that is what I'm doing again this year (from a can). I'll probably scramble some eggs and make some turkey sausage to go with.

I'm planning on making cinnamon rolls for Christmas Eve to drop off for our friends, but DS doesn't like them. I'll get a donut for him and h will make something savory, but I'm not sure what yet. Biscuits and gravy sound really good. Christmas Day we'll be at my parents and I'll bring ham & cheese breakfast enchiladas, french toast casserole, and hash browns.
I was going to make egg casserole and cinnamon rolls, but then I thought about just how crazy Christmas Eve and Christmas are going to be just with getting to church, getting the presents ready, and getting everyone packed and ready for our 4pm flight on Christmas. So I ordered a couple quiches and plan to pick up a bunch of bagels and cream cheese on Christmas Eve, then serve it all with fruit and bacon.
