“With sorrow—for this Court, but more, for the many millions of American women who have today lost a fundamental constitutional protection—we dissent,”

Instead of a gadget, what about buying some nice herb infused olive oil, interesting spice rubs, or a Himalayan salt block (http://www.surlatable.com/product/PRO-1909050/Bittermans+Himalayan+Salt+Block)?

Not really random, but I could write a poem regarding my love of my rice cooker. That this is my favorite thing in the kitchen besides the double oven. Fuzzy logic all the way
Magnetic measuring spoons! Two spoons in one, so I don't need to wash them in the middle of most recipes. And since they stack so nicely together in the drawer, I never lose them!
There are much cheaper options. I personally love how these are color coded, so I usually know exactly which one to grab.
I have the electric knife sharpener listed here, too. I love it! I'm always offering to sharpen friends' knives when they complain about it. America's Test Kitchen reviewed all kinds of sharpeners & this one won.
I want one of everything I don't already have in this thread. I need a bigger kitchen!

I'm growing older but not up. My metabolic rate is pleasantly stuck, let the winds of time blow over my head. I'd rather die while I'm living than live while I'm dead.
I love the Earlywood products, especially the "sauté". How about a cookbook? I'm in love with "a modern way to eat" by Anna Jones. Ottolenghi ones are also excellent.
Microplanes? I have a couple and they are always needing to be washed. I use them for both zesting and grating garlic.
We have a Thermopen, they recently were on sale so you might want to check to see if they still are. They also have a meat thermometer for when you are cooking a roast and want to monitor the temperature from outside the oven (this is going to be my next purchase). You put the probe in the meat, run the cord out the oven door and watch the temp. No need to open oven.
A mandolin is nice to have, good ones aren't cheap though.
Does he have a juicer?
I'd be reluctant to buy him a knife because these are things that are very specific to a cook/chef. Different knives fit hands different ways, and unless he has mentioned a particular one, I wouldn't buy it.

Thermopens are worth every penny if that's in your budget. I also adore the micro plane box grater.
I just got a pressure cooker for christmas and I am obsessed. He's probably way fancier than that, but I cooked salsa chicken from frozen chicken breasts in 30 minutes! Crazy, lol. Anyway, in case this interests you:
