Flexible cutting boards. They take up far less real estate than an actual ginormous cutting board. And they're cheap. If they get gross, toss them and buy new:
You could also go to a local restaurant supply store. They have all kinds of fun things to choose from. You can get some good ideas for gifts that you would have never considered.
Not a random kitchen gadget, but another idea- how about a cooking class for the both of you to take together? Unless he takes cooking too serious and it wouldn't be fun
DH and I have taken theme classes at a local store. It was fun to do something together. Also, they have us a coupon to use at the store. So perhaps a class and a gift card to use?

I just bought a silicone rolling pin. I'm not exaggerating when I say it's lifechanging. Okay, I'm exaggerating a little bit, but it's a really nice rolling pin.

Vitamix, which is expensive, but I use it a lot, and it never breaks. Lemon zester Nice wine bottle opener Fun ice cube trays Nice colander Awesome small fry pan for an egg or something little, like booter and herbs
I just got a pressure cooker for christmas and I am obsessed. He's probably way fancier than that, but I cooked salsa chicken from frozen chicken breasts in 30 minutes! Crazy, lol. Anyway, in case this interests you:

Is Charleston Cooks still around? If so, what about a gift certificate for a class and a gadget. While you're there, you could ask for recommendations.
