The secret is to taste the batter as you go. Start with a basic recipe, then add cinnamon and sugar really to taste. This will get it just right!
Here's my pie recipe along with notes:
This is my basic starting point:
3 cups mashed sweet potatoes
2 cups sugar
3 eggs
1 stick butter (softened)
1 can (14oz) of Eagle Brand Condensed Milk
1 tsp vanilla
1 tsp cinnamon
1 tsp nutmeg
2 Deep Dish Pie Shells
I use around 4 large sweet potatoes. I BAKE my sweet potatoes first (not boil). Some people boil them; I don't because they seem to be sweeter baked. Bake until soft, allow to cool, and then peel (the skin comes right off) and mash the potatoes in a large bowl. Mix half of the can of milk and 1 cup of the sugar into the potatoes. You'll want the mixture cool before you had the eggs. Add the eggs and mix well. Then add the butter, cinnamon, nutmeg, and vanilla.
Taste the mixture. Yes. I said taste it. You get to decide how sweet you want it. Add more condensed milk and sugar. Blend until smooth.
Pour equal amounts of the batter into the two pie shells and bake at 350 degrees until pies are set. (about 35 minutes)
Note: These pies are by trial and error. I once attempted to make a pie straight from a recipe. I failed. Over the years, I just take a starting point and go from there. I usually don't use an entire can of condensed milk. Normally, I use about 3/4 of a can. If you want more cinnamon - add more. I don't typically overdo the nutmeg, so just a teaspoon there.
Is this just condensed milk or sweetened condensed milk?

I really want to try this. I've never had sweet potato pie, but I love sweet potatoes. I like the consistency of pumpkin pie, but not the flavor. Seems like a different primary starch would be perfect!

Last year when I made this one it was my first sweet potato pie, I was used to having pumpkin pie instead. It is so delicious I can't say enough about it. I have the sweet potatoes baking now, it won't be long until I'm eating the pies. It's worth it to make and it's not terribly difficult. The key is tasting as you make it so you control how sweet it is and it's perfect.

I used a little less than 1 cup of sugar and I baked the crust for a few minutes before filling (I also spread melted butter on it with a sprinkling of brown sugar). I made the two pies for my husband's work, so I didn't actually get to taste them, but I did bake some of the extra filling in a ramekin and devoured it.
According to my husband, the pies were a big hit, even with his coworkers who are Southerners.
Just out of curiosity - would this be considered vegan if I used non-dairy butter and vegan/gluten-free shells (I think I can get them at Sprouts or Whole Foods or something, right?) and would it work with something like coconut milk instead? There are two vegan pie recipes on the Teacher Thanksgiving Pie list at the middle school. I am most definitely not vegan but I wanted to see that the two hardest requests would be taken care of.

No, because you would need to find an egg substitute as well. You need the eggs to bind the sweet potato.

You can find sweetened condensed coconut milk. I'm not sure how it bakes though.

Now I want sweet potato pie..... I like to separate the eggs and fold in the egg whites - it makes it airy like a mousse (which you may not like, but I do )
I've done pumpkin without the egg and had no problem with it holding firm, I do not know if that would happen with sweet potato. But an alternative binder is 2 tbsp water, 1 tsp oil, and 2 tsp baking powder. Aquafaba is also supposed to be good but I have never had the chance to try that as I do not eat garbanzo beans in any form.
The real key to using alternatives to eggs is to go lighter on the liquid portion.

Can I just use pumpkin vs sweet potato and sub some cherries in for the sweet potato. I will also try crisco instead of butter and will make a graham cracker crust instead of using the original.
Top it with salt and if you want to be really daring try some crushed red pepper.
