DH had inherited his grandmothers china, and we both like it, so we didn't register for any.
We use it when we host dinners and sometimes when we just feel like having a nice dinner. We did register for crystal and we do use it several times a year. We thought about registering for nice everyday dishes, but the only pattern we both liked was too expensive for us to feel comfortable asking others to purchase for us. We are still using a set DH bought ~15 years ago for $20.
My parents have more than 10 full sets of different china--I'll likely inherit most of them (I don't believe my SIL likes any of them beyond the Christmas set). They do use most of them, rotating Sunday dinner and when people visit.

Everyday: Caterer's Box from Pottery Barn
We got EVERYTHING for this set because it is VERY REASONABLE!
For our "Wedding China" we did "Royal Albert Old Country Roses"
we went through Macy's but can get it at other stores too
We have 8 full place settings (registered for 12) and a number of serving dishes.....still building it since we have been getting pieces for Christmas and will probably be getting some for our 1-year from my MIL
We choose the Lenox Federal Platinum pattern. I think we received 5 sets & some of the accessory items (accent plates, teapot, platters) as gifts. We had registered for 8 settings, so we ended up purchasing the remaining with Macys gift cards we received during an awesome sale. I still like the pattern.

My advice to Amoosed, though, is to register for a really nice set of white everyday dishes, some patterned salad plates that will go with it, and lots of white serving pieces. If your wedding is large enough to "provide" fine china and you find a pattern you love, then register for 10 place settings. Tastes change, and you may be more confident in choices, as well as needs, in a few years. How do you entertain? Dinner parties = fine china; hanging out = everyday; luncheons = a mix. Do choose glassware and flatware that is good quality.
Everyday: Wedgwood Provincial Garden Blue, tons of Spode Blue Room, and antique blue transferware - enough for for 45. (!) I also have white (now discontinued) everyday for 12. I use a "hotel" type silver plate flatware. There's a good one at Pottery Barn. Glasses are Rochere Shell.
Fine: Lomonosov Cobalt Net; Mom's Noritake Loyalo, which I adore, and White with gold rim from my Grandmother. I would love to buy Haviland Imperatrice Eugenie. My sterling is Gorham Buttercup, which was also my Grandmother's. Crystal: Czec: discontinued now. I have service for 12 in each.
Mixed: MacKenzie-Childs: Honeymoon in 4 mixed colors; Taylor in all patterns; Taylor serving pieces. Courtly check enamel chargers. I use these for parties.
Taylor Serving pieces: there are many different mix and match fun patterns.
Ah, I so love that you have Spode Blue Room and antique transferware for 45! My mom has a ton of Spode Blue Room that I will get some day. I will also get her sterling, which combined with my own of the same pattern (Gorham King Edward) will give me silver for 36. I kind of forget that having obscene amounts of china, crystal, and silver is odd until threads like this. My brother and his fiance are only registered for 10 place settings of china and no sterling, and my mother is so concerned that they won't have enough stuff!
I have several McKenzie Childs Courtly Check serving pieces as well.
We have 14 complete place settings in Wedgewood Crown Gold, 12 dinner and salad plates in Raynaud Allee Royale, and 12 salad plates in Tiffany Holiday. I had a big, relatively Southern wedding where a few hundred people insisted on gifting me china, crystal, and silver (which is why I also own 72 stems of Waterford). We do use it, though generally only a few times a year. The "every day" dishes we registered for when we got married have long since gotten chipped up and been passed on. We generally use Fiestaware for every day now.

Oh wow, that's an impressive collection. I envy you. Then again, I don't have anywhere to store even 1/8th of that, so I guess I should stop being envious
