Are the floors staying, too? My first thought for the backsplash was grey, which goes well with white and yellow, if you've got a more modern look going.
ETA: I would also paint the cabinets first and see if you can live with the brick after that. You might not mind it that much.

I'd leave the brick alone, paint or reface the cabinets off-white (almost white, not quite though) to brighten the room up, copper knobs and pulls to tie in with the brick and then cozy the room up with a window treatment and throw/pad in front of the sink. I've never heard of painting formica, but if it can be done it might be worth doing.
Depending on how old the kitchen is, I wonder if you could even paint the brick. It's such a porous surface, I imagine it's pretty soiled above the range.
Oh sweet baby Jesus. I'd paint it all. Cabinets, counter, maybe even the brick. I'd put some peel and stick tile down on the floor as well. Rustoleum makes painting kits for cabinets and counters. I wouldn't spend money on much more than paint if you plan to rip it all out in a few years.
If you don't want to mess with painting the counters, I'd still consider replacing them with an instock laminate from Home Depot or Lowes. The instock stuff is super affordable and could be a nice update til you are ready to remodel.

If you guys are at all handy, look at the in-store countertops at both Home Depot and Lowe's. Eyeballing your pic, you might be able to get away with a single 10-foot length, which would be between $150-200. It could be an easier and more durable option than those paint kits.
I did a remodel of one of my rentals using them, let me see if I can find the post.
If you're thinking of doing a complete re-do in a couple of years and don't plan to do a lot of kitchen entertaining in the meantime, I'd probably save all of the money you'd use now to move up the renovation date. Re-painting cabinets would be too much work for such a short term fix for me.

I agree. Just embrace it and tell people you will be completely renovating it. I really don't think painting will make much of a difference bc of the floors. Save your money for the renovation.
