You need to season the shit out of that pan. Lard is your friend in the seasoning department.

Most grocery stores carry lard, I suspect. Find it with the cooking oil and shortening (Crisco). One of these days I'm going to get brave and buy some to make a pie crust.
It is easy to find lard here, but in New York you might have to find ethnic stores. It is on my baking aisle but also with the Mexican food. It is used to make traditional tortillas. I use shortening in my tortillas but lard is the original fat in them.

I want a cast iron skillet. I don't really cook, though. My grandma uses her old school one to make the world's greatest cornbread. Come back in and let us know what you make!

I seasoned my Lodge. I like my Lodges so much better than my Le Creusets.
I love to make a nice extra virgin olive oil fried egg (Bon Appetit has instructions). Gets nice and crisp and is so delicious. I put that on top of a Roesti or a slice of bread.
I don't use soap to clean it. I usually just put water in the pan and boil it to clean it. I add baking soda if I cooked fish or something like that. I then dry it and wipe with vegetable oil or some other oil with a high smoke point.

First of all, check out the Cook's Illustrated version of seasoning. It uses flax oil. It's awesome. It makes your pan basically non-stick. You can buy flax oil at your regular grocery usually, and even Target carries it. The first thing you should make is bacon in the oven. Lay it in the pan, stick the pan in a cold oven, and set the temp to 400. Let it go for about 20-30 minutes. It melts in your mouth.

I live in Rural Vermont and we can get it in all of our stores.
But as I live in Rural Vermont, we use fresh bear grease to season ours.
Also to cook our steaks in.
My husband asked if that is the same kind of bear grease that you use to waterproof shoes. I had no idea that bear grease was even a thing.
Good question...I have no idea! My uncle gives me the bear grease for cooking every year, I will have to ask him if it is the same that he uses for his boots.
It's got to be seasoned well though if you don't want it to rust. My cast iron skillet is a hand-me-down from my late step-dad. Best damn skillet ever.
