My 11 year old son would eat pancakes or frozen waffles every day.
I try to make him eggs three times/week and let him have what he wants the other two days (he fends for himself on the weekends), but he is getting sick of the eggs. He has grits sometimes, too, but grits always give me gas, and I don't want him to have gas at school. Plus, that's basically just corn, right, so not much nutrition there.
I've made:
breakfast sandwich (toast, cheese, eggs, and sliced ham or turkey) breakfast taco (same as above, but obviously in a tortilla) regular old eggs and meat
We also buy the breakfast burritos from Trader Joe's sometimes and he likes those.
I try to give him some fruit with his breakfast most days and usually milk (sometimes orange juice).

Oatmeal? QFC and Fred Meyer sell Nature's Path Organic Flax Plus Oatmeal. It's just very lightly sweetened with 4g of sugar. We have frozen berries from Costco and we'll add that to the oatmeal.
Or smoothies? We make them with a banana, orange, apple, frozen berries, and milk (and fresh spinach if we have it). If you throw in a tablespoon of unsweetened cocoa powder it will have a hint of chocolate (with only the sugar from the fruit).
What about cereal? When I track what I eat, I always discover that I only get enough fiber, iron, and calcium on days when I eat fortified cereal. The no cooking aspect is also a plus.
Eggs are kind of like tofu for me... I like to mix up stuff in them. Ketchup, jam, cinnamon/vanilla, peanut butter, fruit, or whatever sounds good at the time. Kids might find this funny enough to eat?

yep. It's good... and I don't get the side eye. Ketchup and eggs isn't weird. Cinnamon and vanilla is just how you make french toast, I just can't have bread.
Side eye was probably a poor choice of words. I just have never heard of those combos before.

My kids aren't the biggest breakfast eaters, but some things they like are:
Waffles w PB and bananas Oatmeal with nuts and raisins Eggs with veggies (I usually just throw in whatever random leftover roasted veggies I have in the fridge, beets, brussel sprouts, sweet potatoes, etc.) Eggs with different kinds of meat (chile verde, machaca, chorizo, bacon, or sausage. Or steak if we have leftovers) I am all about using leftovers in breakfast The ever so healthy nutella toast. Lol. Smoothies Breakfast burritos or sandwiches

I make "sweet treat eggs" with vanilla and cinnamon as well. Let them dip in a little syrup. yeah, that adds some sugar, but eh, whatever, it's just a little and the majority of the meal is still eggs.
E also likes "milkshakes" where I use vanilla greek yogurt and put it in a blender with one fruit. We've done strawberries, raspberries, and blueberries. All hits. So kind of like a smoothie, but easier (less chopping/prep) and more protein. Haven't found a good protein powder that she'll eat, so it's literally a 2 ingredient smoothie/milkshake. Maybe 5-6 strawberries in a cup of yogurt. Unfortunately N hates fruit and yogurt, so those are out for her, but E loves her "breakfast milkshakes."
There are also Special K protein cereals that my kids like. Sometimes they like them dry, sometimes with milk. They like the Cinnamon Brown Sugar crunch more than the plain flakes.

Our daughter is only 3 so she's firmly in the "that's gross" camp for this but we make a sweet potato "hash" during the week that we eat.
Sweet potatoes diced into cubes add to pan with coconut oil, sprinkle with sea salt, pepper, garlic powder, cumin, cinnamon, That's the base right there. we cook that for about 5 minutes then add diced apple and cook that for a few minutes and then add diced mini chicken apple sausages and then we top with eggs and or avocado.
We've done onion, bell pepper etc. You could do bacon instead of the chicken sausage or regular sausage etc. We make ours Whole30 compliant.
Or just regular diced potatoes with veggies and eggs and a meat. Make it on sunday, eat it all week.
M eats breakfast at school. They serve french toast sticks, bagels with cream cheese, sausage biscuit, cereal and pancakes. On weekends we usually do waffles and eggs. We will also do bacon, greek yogurt with granola (she LOVES this), and breakfast cookies (google recipes, ours have bananas and oatmeal in them).
I like this idea b/c my son wants to eat waffles all the time. Is protein powder usually made with whey though?
I just bought a vegan organic protein powder at Costco called Vega. It seems to blend in well with stuff so far.
That would be amazing, since he's allergic to dairy and eggs (so protein at breakfast is hard). I beg him to let me put pb on his waffles, so this may be a better option, thanks!

Vanilla bean flavor mixed into pancake mix. Smoothies with frozen fruit and coconut milk. We don't have any dairy allergies in my house. So that all I have for dairy free.

I just made a batch of sausage balls and froze them. Not the healthiest but I am a strong believer in a protein for breakfast. (I loathe breakfast and always skip it. Then gorge mid-day. Do as I say, not as I do is my motto
I'm fine with a waffle, pancake etc if they'll have a protein and some fruit.
We do a lot of breakfast tacos, eggs. cereal, etc. I try and mix it up.

My kids love Greek yogurt with berries for breakfast.
smoothies are good too
My kids go through phases. Last school year I made eggs with toast every morning and they had Greek yogurt with berries. The year before they only wanted pancakes, waffles or toast. This year it's bagels or yogurt.

We make oatmeal with whole milk and add raisins, cinnamon and apple sauce.
I will also make whole-wheat banana nut pancakes and add frozen blueberries. 100 Days of Real Food blog has a great recipe I use but add nuts and berries. It makes a lot and we toast the leftovers.
Also meant to add we put peanut butter on waffles too. Then add sliced strawberries. He really enjoys the combinations of flavor!
My older one is in K and he has 30 min to get up dressed eat and out the door so it's usually the vans high protein waffles with PB and some fruit, yogurt or oatmeal.
