These are our two favorite soups to make in the winter. Both recipes are from my MIL.
Chicken Tortellini Soup (H said when he was little, this soup won him 1st place at the Fair in 4H, haha)
- 4 cups water - 4 cups (or 2 cans) chicken broth - 1/4 cup chicken soup base - 1/2 tsp basil - 1/2 tsp oregano - 1/4 tsp minced garlic - 1 cup chopped carrots - 1 cup chopped celery - 1 can corn (drained) - 1 9oz bag cheese tortellini or any preferred noodles - 4 cups cut up cooked chicken
- put all ingredients into a large soup pot and simmer on medium until noodles and vegetables are tender
(Can add a can of cream of chicken soup if you want, but I usually skip that and it still tastes good. Also can adjust water and noodles to your preference.)
Hamburger Soup
- 1.5 pounds browned ground beef - 6 cups water - 6 cubes beef bouillon - 2 cups chopped carrots - 1.5 cups chopped celery - 1/2 cup chopped green pepper - 1/2 cup chopped onion - 1 can corn (drained) - 1 tsp salt - 1/8 tsp pepper - 2 bay leaves - 1 tsp basil - 1/4 cup ketchup - 28 oz can chopped tomatoes - 8 oz can tomato sauce - Frozen Reams noodles or a cup or two of whatever noodles you prefer
- Mix all and simmer until noodles and vegetables are done.

Cheeseburger chowder:
The original recipe doesn't call for potatoes, but I had to add them, because I love potatoes.
Cheeseburger Chowder Serves 6 1 lb hamb. 1/2 cup celery, chopped 1/4 cup chopped onion (white or yellow) 2 Tblspn chopped bell pepper **not in original recipe, but a potato or two, cubed 1/4 cup flour 1/2 tsp salt 4 cups whole milk 1 tblspn beef bullion 1 cup sharp cheddar cheese grated
Brown hamb. drain grease. add veggies (including potatoes if using) & cook till tender. Blend in flour & salt. Add milk & bullion. Cook & stir over low heat till thickened. Add cheese, cook & stir until cheese is melted.
Oven Buttered Corn Sticks (the woman I got the recipe from said her son insisted she include the recipe for these, because "you can't have the soup without them")
4 tblspn butter 2 cups Krusteaz (or Bisquick) 1 8 3/4 oz can cream corn
preheat oven to 450 melt butter in baking pan combine bisquick & corn till soft dough is formed. Roll out, cut into strips, roll in melted butter. Bake 10-12 mins

("Easy") Borscht
5 Cups Water 1 14 oz Can Beef Broth ¾ Tablespoon Salt ½ Cup Chopped Carrots ¼ Cup Green Pepper 2 Ribs Chopped Celery 3 Medium Beets washed and halved not peeled 1 6 ounce Can Tomato paste 3 Medium Potatoes peeled and quartered __________________________________________________
2-3 Tablespoons Butter 1/2 Cup Chopped Onion 14 ounce Can Diced or Crushed Tomatoes 2 ½ Cups Finely Shredded Cabbage __________________________________________________
¼ C Milk or cream 1Tablespoon Butter Salt and pepper to taste Sour Cream (optional) Dill Weed (optional)
Place water, broth, salt, carrots, bell pepper, celery, beets, tomato paste, and potatoes in a large stock pot over high heat. Bring to a boil, reduce heat and let simmer at least 30 minutes, or until potatoes and beets are soft.
Melt 2-3 T butter in a separate skillet over medium heat. Saute onions in butter until tender, approximately 5 minutes. Stir in tomatoes and cabbage, reduce heat to medium low and simmer for 20 minutes, or until tender.
Meanwhile, remove beets from boiling liquid, remove outer peel, and chop into small cubes. Add back into pot.
Remove potatoes from pot and place in separate bowl with ¼ cup milk and 1 tablespoon butter, mix together until smooth.
Add onion, tomato and cabbage mixture to pot along with the mashed potatoes. Combine and simmer over low heat for an additional 10 minutes. Serve with a dollop of sour cream and a sprinkle of dill weed.

I also do a chicken tortilla soup, but don't really have a recipe. I just use a can of refried beans, some salsa, some diced tomatoes, shredded chicken, and taco seasoning, maybe some chili powder. Can throw in onions, cubed carrots, sour cream, etc if you want.

It's probably snobby and trite but I've been on a kick of making my own long cooked chicken stock or bone broth (leftover bones, especially roasted ones, go in a ziplock in the freezer) and I'll never go back (unless I run out. I don't actually sweat it much but homemade is so much better) I swear anything is delicious simmered in it. Dried beans with a bay leaf. Boom, it's delicious soup. Some noodles cooked in it with and garlic and hot sauce make a phenomenal cold fighter.
I especially like black beans (cooked from dried), bell pepper, a jalapeño, onion, bay, oregano, a splash of red wine vinegar, and sprinkle cilantro to finish it for Cuban black bean soup. I think it's a favorite because it's very satisfying and homey but is perky and bright too. Perfect for nasty winter waiting on spring.
