I don't have a recipe but African peanut soup is awesome!!!
I can also walk you through a mushroom brie soup I make, not from a recipe but I winged it
Take a pack of mushrooms and chop them so some are pretty fine and others are kind of chunky
EVOO, saute some garlic and shallots. Add the mushrooms and salt and pepper until they are tender. Sprinkle with 2 tbsp of flour. Slowly whisk in milk (probably about a cup). Then slowly whisk in beef broth (small can). Then take brie, rind removed and cubed and drop in one at a time whisking whisking whisking. Other seasonings you can add are parsley sage rosemary thyme.

I usually don't follow a recipe but everyone in my house loves my cabbage soup (which sounds gross but is so good) and my loaded potato soup. I'm making that for a soup competition tonight actually!
I wish I wasn't the only person in my family who likes soup.
My H isn't a fan either! That's why I make soup every time he's out of town. His loss!
I have the worst case: my H loves CANNED SOUP! Canned chili, canned chowder, canned everything. Ok fine, I could deal, but he prefers canned over homemade!!😦
And I know: you guys are probably judging my soup-making abilities. But NO! I share with neighbors sometimes (& freeze, because I always have way too much!), & they almost always request recipes. We're having a "chili cook-off" at my parents' for Christmas & H wants to do canned HORMEL (not even fancy!!) as our addition. (Fyi: my plan was & still is White Chicken Chili; he can do whatever he wants) I think this is what his mom "made" growing up; it's the only explanation. It never fails to disappoint me, confuse others, & make my heart hurt for his shitty taste 😏 #onlyhalfjoking
