Ugh. I'm broke, so I'm eating what's in the pantry all but probably 2 nights this week.
Sunday: Mac n Cheese, vegetable (not too hungry, but want to make something with leftovers for a lunch or two) Monday: Chicken Noodle Soup & Grilled cheese Tuesday: TBD at home Maybe a Jersey Mikes Sub Wednesday: Tofu burrito (not expensive, so this will happen) Thursday: Big salad or pizza out Friday: probably out/order in or eat something at home to save $$ Sat.: probably something from the freezer/eat stuff that needs to be eaten night

Saturday - pork tenderloin medallions with balsamic reduction, roasted asparagus and brown rice Sunday - chicken, leek and rice soup Monday - salmon with bacon and corn saute and salad Tuesday - leftover soup Wednesday - family in town - but based on weather forecast and flight unreliability we're getting take out.... Thursday - smoked pulled pork with sides Friday - not sure...
I made porcupine meatballs for dinner last night and there is enough left over for lunch for most of the week. My mom used to make them all the time when I was a kid but I've only made them once before and it was quite a while ago so kid has never eaten them. She wasn't convince that they weren't actually porcupine LOL. She wouldn't admit that she liked them but she ate 3 or 4 good size meatballs so I'm calling it a win!
Mon - French toast Tues - brats Wed - we eat at church and it's breakfast this week Thurs - H is working late so not sure Fri - kid has dance so we get home later but I think we're going to do chicken pot pie.
I just started WW last week so my plan for the week is all points friendly meals.
M: grilled sirloin steak, steamed broccoli, pan “fried” potatoes T: Turkey meatballs with sugar free marinara, regular spaghetti and garlic bread for the family and spaghetti squash for me W: Blackened Cod, sweet potato mash, zucchini Th: grilled salmon, coconut rice, sautéed snow peas F: take out
M- Pioneer Woman pot roast and rice T - chicken parm from the grocery store that are like chicken Kiev style with pasta W - it’s Ash Wednesday so fish sticks, salmon and Mac and cheese Th - sloppy Joe’s (https://www.allrecipes.com/recipe/24264/sloppy-joes-ii/) and potato chips F - probably McDonald’s so those observing Lent can have fish

this week I'm struggling. I'm doing keto so trying to find things that taste good and I want are tough.
Tonight: steak with a salad and asparagus Tomorrow: nacho's for DH and I'll do a taco salad Wednesday: seafood soup Thursday: pork chops on the grill Friday: tuna steaks since it's lent and some sort of veggie Saturday: out, we're meeting friends for dinner so I have no idea what or where we are gong
bex1973 -- omg I haven't thought about porcupine meatballs in ages. They're basically meatballs with rice, right? My mom made them once when I was a kid, but they didn't turn out so she never made them again. I think she was supposed to cook the rice first?
H would never go for it, but if it's just me I love a good meat/rice combo. I don't even bother with forming the balls -- just brown the meat and seasonings, dump it onto (cooked lol) rice, and then smother it all with gravy 🤗

Yep! You don't cook the rice first though - the rice cooks when you bake the dish. At least the recipe I have (which is my mom's) anyway. I did a mixture of ground beef and ground sausage. Next time I'm going to add more tomato soup on the top because that "sauce" was the part my kid liked the best. There were still a few crunchy grains but not too many.

We just recently got a new magnetic chalk marker erasable planner. We had a family meeting last night and planned out the weekdays for this week:
S- Sloppy Joes and frozen fries S- Baked cod with broccolini and brown rice M- Pulled pork sandwiches with mac and cheese and cole slaw T- Baked teriyaki marinated drumsticks with white rice and lima beans (or some other frozen veg) W- Leftovers T- Leftovers F- Order out for pizza at a new place we want to try

Sun: Jalapeno popper chicken casserole I pulled out of the freezer, canned pears, random raw veggies leftover from the Super Bowl
Mon: Leftover broccoli gruyere soup and homemade pretzel buns, leftover casserole too, because I don't think we have quite enough soup
After that we still need to meal plan. We're going to do breakfast because my SIL gifted us a dozen farm fresh eggs from her chickens. And I'm on my own Wednesday because my H has to shuttle my MIL from Portland to Seattle, so I'll probably eat cheese and crackers.

I did about an hour 15 minutes at 350. I did 3 pounds of meat, 1.5 cups rice, some minced onion and garlic for the meatballs then topped it with 2 cans tomato soup that I mixed with a can of water and I added some garlic powder when I mixed that up and just dumped it on top. I covered it with foil when baking. But next time I'm going to use 3 cans of soup. I also sprinkled some rice in the pan before putting the meatballs in.
ETA it also calls for a tablespoon of worsteshire sauce (LOL I have no idea how to spell it but you know what I mean) but I didn't have any so I just skipped it.
Over the weekend we made some really good egg salad with lox sandwiches on milk bread that with the price of eggs really seemed like a millionaire’s sandwich lol
This is another week where both of us are out of the house at weird times. I have no interest in cooking this week but here we go!
Ugh we are burnt out of all our go to crockpot meals which we live off of right now. Crockpot dishes need to be dump and go and can easily be eaten out of over a course of a few hours. DD eats dinner at 3:30ish, DH 6:30ish, I put away at 8pm when I finally get home and eat as leftovers for lunch the next day.
Mon-stopping at Costco on the way home Tue-crockpot French Dips Wed-? Thurs-crockpot ? Fri- ?

That baked ravioli dish sounds amazing! What kind of ravioli do you use? I never buy frozen, is there a particular brand that’s good?

I've used the fresh kind in the refrigerated section from Costco both times I made it. The first time I used a butternut squash one. The second time I used a spinach and cheese. Both were great.
Almost looking forward to more complicated stuff next week when DH is home, I'm running out of easy stuff with minimal clean up.
Sun: fancy dinner out with friends, my mom and kids got Noodles & Co. Mon: kind of Indian sloppy joes... ground turkey with lots of Penzey's curry blend, cumin, garlic, ginger, etc. on toasted mini naan with yogurt sauce, cucumber/bell pepper/red onion salad Tues: baked chicken flautas (prepped last night with salsa chicken from the freezer), black beans, corn, maybe avocado salad Wed: probably just chicken nuggets, tator tots, broccoli Thurs: garlic bread pizzas, whatever veggies are left in the fridge Fri: DD will be away and I don't think DH will be home in time for dinner, so I'll probably take DS for 5 Guys or something Sat: DH's first night home after three weeks in Singapore, so I'll see if there's anything he particularly wants
ETA: Ooohhh, it didn't click that it's Shrove Tuesday (even though my office it having a Mardi Gras party). I think I'll do pancakes, sausage, and cinnamon apples tonight, taquitos tomorrow night, and skip the nuggets/tots. Will put the broccoli with the garlic bread pizza.
