I use 100 days of real food and real housemoms websites for meal planning. They have weekly meal plans - although I do pick and choose from different weeks. Real house moms also has tons of recipes based on what you want - casseroles, soups, crock pot cooking, etc
I'm not sure what happened (I promise I'm not pregnant) but lately the idea of meat has become really repulsive to me.
My son basically only eats meat, and H and DD are hit or miss, so I'm trying to come up with meal plans that are complete without meat for me, with simple meats to go with it for the rest of the family. I don't want to make two separate meals.
I thinking:
Tonight I'm doing a pork roast for them to use it up, loaded sweet potato for me.
Then: Breakfast for dinner Stuffed peppers (some veg some traditional) Enchiladas
Tuesday I'm hosting my book club do we'll do takeout. Thursday is usually every man for themselves due to activities. So hopefully this will get us through to next weekend.
S. Chicken sausage, Greek potatoes and veggie bake M. Jambalaya from freezer T. Cheese ravioli with meat sauce W. Frozen pizza, probably R. Chili F. Takeout S. Whatever is on sale
I went to a local Asian mart yesterday ... and came home with two whole fish 😳
So... I think I'll fry one tonight and also cook mapo tofu, bok choy, and spaghetti squash or cauliflower rice.
I'm off tomorrow, so I'll cook the other fish (it's big so I'll probably roast it) and serve with kale and wood ear mushrooms and sweet potato fries.
Then I'll either have to freeze or cook a couple of small pork tenderloins on Tuesday. I got stuff for mango chipotle salsa to go with that... and maybe green beans and cauliflower mash to go with it.
And then we can have leftovers for the rest of the week because I will be cooked out 😵💫
Tonight: Two Sleevers Butter Chicken with chickpeas added, rice and maybe naan. Monday: spaghetti with ground beef, salad Tuesday: Whole Wheat banana nut pancakes, fruit salad Wednesday: Skinnytaste Italian Sheetpan Dinner with roasted broccoli and red peppers, rice pilaf for the kids and sweet potato for me. Thursday: Panko/Parmesan crusted flounder, leftover rice pilaf and roasted broccoli Friday: black bean soup with grilled cheese.
I feel you. This is why I get a meal prep kit delivered for 2 meals a week. I am terrible at meal planning but somehow it's easier when 2 of them are done for me. The other nights we do some convenience foods or I make a simple pasta or salad.
Tonight is grilled steelhead trout, sautéed zucchini and mushrooms, and couscous.
MIL is bringing dinner over tomorrow.
I’m making chicken tikka masala for us to eat the rest of the week before we head up to the mountains on Friday. And I pulled out two pieces of ravioli lasagna from the freezer too.

We're not doing anything inspired this week.
Sunday - pasta of some type (probably ravioli) with Italian sausage and meatballs Monday - Fried Chicken Cutlets with a vegetable with rice and corn Tuesday - Sloppy Joes Wednesday- pasta again, husband is Italian we'd eat pasta 4-5 days a week if I'd let him Thursday - leftovers or breakfast for dinner Friday - take out Saturday - Steaks on the grill and baked potatoes
Sunday: grilled brats, salad, rice Monday: veggies and noodles in a Thai-ish peanut sauce Tuesday: creamy sausage and spinach pasta Wednesday: homemade pizza Thursday is takeout, Friday leftovers
Man, I want Sloppy Joes now. And by Sloppy Joes, I mean Manwich from the can. So nostalgic. I think it would be a fail with DH and DS, though, hence why I’ve never made it for them.
Sun: l/o lasagna (pasta w tomato sauce for DS) Mon: lamb stew w fresh bread Tue: likely something w chicken, TBD Wed: is my birthday so might do takeout Thu: something small so no leftovers because… …Fri: leaving for Cuba vacation
Tonight: lemon pepper salmon, either rice or quinoa, edamame Monday: tacos/taco salad or cheese tortellini and meatballs with garlic bread Tuesday: honey lime chicken enchiladas from the freezer Wednesday: turkey pumpkin chili Thursday: whichever one we don’t have Monday Friday: no clue
This week I'm making this bacon Brussel sprouts recipe (minus the dried cranberries and I only put a third of the maple syrup in) and serving with an egg on top:

Sorry bout H’s luck, but I’m not unhappy to not be planning meals this week. He’ll eat left overs, frozen pizza, and lunch meat sandwiches with no complaint I’m sure.
