So, just taxes and the lawyer? Because if you do own property jointly you will need one if you break up anyway. I guess I just don't get wanting to legal benefits and the party but not the word. If you didn't want to own any property together, or want any of the benefits of marriage, I could understand this better.
My suggestion: Have a wedding but don't get a marriage license. Then you can pretend you are married and have all of the benefits and none of the non-benefits. Problem solved.

Civil Union! That's what you need. Then you aren't married, you won't get divorced, and you only get some of the legal benefits, but not the taxes.
Some states don't have this option I would have gotten a civil union but it's not allowed in WA unless you are a same-sex couple or over a certain age.

You are going to have to hire a lawyer to deal with all your paperwork anyways if you are in a LTR.
