Another vote for Atlanta. Lots of great food, aquarium, World of Coke museum, Stone Mountain and there's a Chiluly blown glass exhibit at the botanical garden till the end of October (I think that's the end). Plus you can be in the mountains of Blue Ridge in 1.5 hours and Savannah in about 3.5 hours.
This is going to sound INSANE but Bentonville, Arkansas. World-class art museum, fantastic restaurants, cute town square probably teeming with Pokemon.

A girl can dream. My IL'S are staunchly chili's, Olive Garden, and Cracker Barrel people. It's a trial, my H and I really push them out of their comfort zones when they visit. I was pleasantly shocked when my MIL suggested the cheese making class.
ETA: Just read menus. OMG, I'm going to try to be sneakily persuasive. Which one should I set my sights on?
T&T is more casual and user-friendly. My parents are also chain restaurant people so I get that!
Do you like cold weather? Come on over. It gets as cold as -65 in the winter. Cozy.
One time H and I were going to go ice fishing without checking the weather. Halfway through our drive, I started to realize it was REALLY windy. So we turned around and went back home. Turns out it was -90 with wind chill on the lake.

Thank you! My SIL will be on board and we'll start advocating, even if it's just "the girls" on the trip. Sigh, this will be quite the bonding weekend.

Have you been to Memphis? I don't live there, but it was one of my favorite stops in recent years. There is great BBQ (and a lot of other good looking places to eat), Beale street is really fun for drinks/live music, and the National Civil Rights Museum was one of the best history museums I've been to. We were only there for about 24 hours but I know there were other things we would have done if we had longer.

Mine is not your typical vacation spot but it's growing into a fun little city.
Bentonville, AR:
Stay at the 21C Museum Hotel and eat the best friend chicken ever at their restaurant The Hive. Walk to the gorgeous (and free!) Crystal Bridges Museum of American Art. There are a zillion craft breweries if you're into beer. Beautiful hiking and biking trails everywhere. The most amazing food truck creperie across the street from 21C. Lots of hipster-y restaurants and shops all around. And the whole downtown area is crawling with pokestops and gyms.
